As the days become a little warmer, a refreshing dessert is great to have at your fingertips. The Vegan Meyer Lemon Bars dessert starts with a shortbread crust and has a delightful lemon curd topping. No Bake Raspberry Chocolate Tart
The combination of chocolate and fresh berries is the way to my family’s heart. This dessert is not only – no bake – but also only takes ten minutes to create. The tart is made with cocoa powder and almond flour which could not be simpler. The filing is a basic chocolate ganache and then fresh raspberries to top it off. The combination of cinnamon and applesauce, to keep the muffin moist, creates a delicious spiced apple taste. These are great for a quick breakfast or an on the go snack. I love knowing I can be healthy but still have some of my favorite desserts. Apple pie is a required year-round treat in our house. This version is a flavorful recipe using cinnamon and cardamom. Vegan Dairy Free Strawberry Ice Cream
This recipe is great with any type berry. If you have strawberries on hand, great – but if not, use whatever fresh berry you have available. I have also made this with frozen strawberries so we can enjoy it all year, even when berries are no longer in season. It is easy to make with full-fat canned coconut milk and light coconut milk mixed together. I like to mix it all in the blender and then add extra pieces of strawberry at the end. Cappuccini Vegan Cups
Coffee lovers rejoice! These Cappuccini Vegan Cups are the perfect way to top off dinner or treat yourself in the afternoon. These are a little more time consuming but so worth it. The little paper liners get filled with dark chocolate and then put in the freezer for that nice first layer. 7 Ingredient Vegan Cheesecakes
The fact that I can still enjoy cheesecake while staying true to the vegan lifestyle, makes me very happy. The bottom crust is made with dates and fresh walnuts with cashews and coconut milk for the creamy filling. Once you have the basics down you can get a bit fancier by adding additional flavors or toppings. Try it with a fruit flavor, peanut butter, or maybe even caramel. I think Key Lime Pie is another great refreshing light dessert. This recipe is 7 ingredients to heaven. It is not easy to find actual key limes so you probably will have to use regular limes. You will need to soak the cashews overnight to make the creamy filling. These are made in muffin liners and that serves as a great way to follow some portion control. Trust me, you’ll need it! Blueberry Banana Bread
Rhian’s Recipes created this delicious blueberry banana bread by using a combination of bananas and blueberries to keep it moist and sweet without any added sugar. It is so delicious when it is warm and can be frozen or stored in the refrigerator and heated by the slice. I like it topped with the flaked coconut or almonds. It is a high in fiber bread and quite hearty. I usually make an extra loaf just to freeze.
Vegan Magic Cookie Bars
Feasting on Fruit created a unique spin on the old cookie bar made with sweetened condensed milk trick. We finally have a vegan version that is healthier and just as good. In this recipe, you still have the great shortbread crust, chocolate chips and coconut. However, in place of the sweetened condensed milk, use ripe mashed bananas. Chilling this recipe overnight is the key to it all blending together well.
