The Green Goddess soup is super versatile, and as someone who doesn’t always have the exact ingredients on hand, that is one aspect I love! This soup has kale, broccoli, spinach, onions, garlic, and more. If you don’t have kale or spinach, you can easily substitute chards or collard greens. Or say you are out of broccoli, just grab cauliflower instead!

Green Goddess Immune-Boosting Soup
We all could use a little more green in our lives, right? This Green soup is one I like to make especially in the fall and winter to boost my immunity and warm me up. This soup is jam-packed with foods that will help ward off germs and fuel your body!
Broccoli
Broccoli is rich in antioxidants. Studies have shown that eating broccoli can help decrease your risk of diabetes, and obesity, while simultaneously increasing your energy levels and fueling your body. This floret green is a must for your diet.
Spinach
What doesn’t spinach do? This Green is great for fueling our body with vitamins and minerals, aiding in healthy digestion, strengthening muscles, maintaining regular blood pressure, and even boosting our metabolism.
Kale
Kale is low in calories and high in fiber. Packed full of antioxidants, Vitamin K, iron, and great for reducing inflammation. Kale has really hit the world by storm and you now see this superfood everywhere, but have you ever tried it in soup?
Garlic
Great for fighting infections, combating common sicknesses like colds, reducing blood pressure and more. Plus it adds a great flavor hit to the soup.
Ground Cumin
Cumin is a perfect immunity booster and a great aid for digestion.
Paprika
This spice contains lots of antioxidants which can help prevent diseases and protect your eyes.
Coconut milk
A wonderful alternative to inflammation-inducing regular milk, coconut milk is packed with tons of vitamins and nutrients.
Vegetable stock
Can’t go wrong with a gut healing veggie stock. Vegetable stock is wonderful for the body and contains so many vitamins and nutrients while creating the perfect base for the soup. Make your own for added immunity boosting properties!
Green Goddess Immune-Boosting Soup Recipe
Try this warming vegan soup to boost your immunity at any time of the year.
Ingredients
- 1 head of fresh Broccoli, chopped into forests (about 3 cups)
- 1 small bunch of Kale, stripped of the thick stem and roughly chopped (about 5 sprigs)
- 1 (5 oz.) bag of Baby Spinach
- 1 tablespoon of Coconut or Olive Oil
- 1 medium sized Onion, diced
- 3 fat cloves of Garlic, minced
- ½ teaspoon of ground Cumin
- ½ teaspoon of Paprika
- 6 cups of Vegetable Stock
- 2 cups of Full Fat Coconut Milk
- Salt and Pepper to taste
Instructions
Wash the broccoli, kale, and spinach and keep aside.
Turn the Instant Pot on the “Sauté” mode, and add the oil, onions, garlic, cumin, paprika, and salt and pepper and sauté for 4 to 5 minutes, until the onions caramelize.
Turn off the “Sauté” function. Add the broccoli and kale and the vegetable stock. Put the lid on, making sure that the pressure valve is in the “Sealing” position.
Select the “Pressure Cook” mode and adjust the time, with the “ – / + ” to 5 minutes.
When the Instant Pot beeps, use the “Quick release” function to let release the pressure. Use a thick kitchen towel while releasing the pressure to avoid burning yourself with the steam as it’s released.
Add the bag of baby spinach to the broccoli and mix it in. The steam will be enough to wilt the spinach.
Now blend the soup either by using an immersion blender or regular blender. If using a regular blender, be careful as the soup will be very hot.
Return the soup to the instant pot. Turn on the “Sauté” mode.
Add the coconut milk and simmer for 5 minutes. Also, check for seasoning and adjust the salt and pepper accordingly.
Serve hot with a drizzle of thick coconut milk or coconut cream and some sliced nuts for texture (optional).
Notes
- There can be a lot of variation in this soup. You can use collard green or chard instead or kale and spinach or even substitute cauliflower for broccoli.
