Ok…I admit it…life is BETTER with scalloped potatoes! On top of potatoes, this vegan, taste-filled recipe is layered with a rich and creamy cauliflower-cashew sauce and baked to perfection…TOO GREAT!

5. Vegan Sausage Casserole with Lentils and Farro
This amazing casserole is full of flavor, very easy to make, healthy for you, and really fills you up. Carrots, butternut squash and potatoes are the base. Linda McCartney vegan sausages are recommended and cooking them separately before adding to the stew gives a very delish flavor.
